Stuffed Green Pepper Cups

I tried this recipe and love it so much, I even have my mom making it.    You can change the ingredients to your taste, I have made it with rice and with pasta called "orzo" (small pasta about the size of rice).    Both were very good, you could also change the type of meat too.

This recipe uses green peppers cut as cups instead of using a whole pepper.

1 pound ground beef

1/3 cup finely chopped onion

1 (15 ounce) can tomato sauce, divided

1/4 cup water

3 tablespoons grated Parmesan cheese, divided

1 teaspoon salt

1/8 teaspoon pepper

1/2 cup uncooked instant rice

4 medium green peppers


Crumble beef into skillet, add onion and brown, then drain.   Stir in 1 1/2 cups tomato sauce, water, 1 tablespoon of Parmesan cheese, salt and pepper cover and let simmer.   Then add rice; cover and let stand for 5 minutes.   Remove tops and seeds from peppers, cut in half lengthwise.    Stuff meat mixture; place in ungreased baking dish, spoon remaining tomato sauce over the peppers; sprinkle remaining Parmesan cheese.    Cover with foil, bake at 350 for about 30 minutes.
