I have tried a lot of stuffed shell recipes over the years and this one became our favorite. As always you can add and delete ingredients to make it your own version. That's the whole fun of cooking, tweaking so it becomes your favorite.
1 package shells
4 cups large curd cottage cheese
12 oz. mozzarella cheese
1/2 cup Parmesan cheese
2 eggs, slightly beaten
1 tsp oregano
pinch garlic powder
1 tsp parsley
1 (26 oz) spaghetti sauce
1/4 Parmesan cheese
Preheat oven to 350
Cook shells according to package. Drain in cold water and cool.
Drain cottage cheese, then mix cottage cheese, mozzarella cheese, 1/2 cup Parmesan cheese, eggs and garlic powder. Rub dry herbs in palms of your hands to pulverized them and stir into the cheese mixture. Stuff mixture into shells.
Spread 1/3 of spaghetti sauce in the bottom of baking dish, place shells open side up and close together in pan. Spread remaining sauce over top and sprinkle with remaining 1/4 cup Parmesan cheese.
Bake about 33-35 minutes, let stand 10 minutes.
